For all you BTDers out there who cannot have coconut milk or dairy of any kind:
I don't know what you all do to substitute coconut milk, but because I was very big into raw foods before I started the BTD, I was able to come up with this since in the raw food cuisine, nut milk and creams were used to imitate milk:
1 cup macadamia nuts 2 cups water 1 TB agave nectar or vegetable glycerine dash of sea salt
Blend on high until well-blended Add more water/salt/sweetener to taste.
Though it doesn't taste exactly like coconut milk, it has nearly the same consistency and flavor, even! This is perfect for those coconut curry dishes that call for the coconut milk. |

I don't think it can foam the same way as cream but you could add a little less water to make it a tad thicker. I suppose you COULD try to whip it but I don't have a beater, so I don't know. Good luck! |

I will have to try this, a good friend of mine told me of using coconut milk in black bean soup. So, this recipe here sounds interesting to me. |

Brilliant! I love, love, love Thai curries and I will have to try making one at home using your "faux co" milk instead of coconut milk itself.
