Here's an Italian carrot salad I have been eating for some time now, I make plenty since it keeps well and is a good any time snack and when it's almost gone I add some greens to eat up the yummy oils and garlic left behind.

1 pound carrots, cut into 3 inch long thin sticks
2 Tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon dried basil
3 or more cloves garlic, minced fine or pressed
seasalt to taste
pepper if you like {I use cayanne}

Steam the carrot sticks till crisp- tender
in a small bowl whisk together remaining ingredients.
Toss carrots dressing in a sealable container. Allow carrots to cool, seal container, shake 'em up put in the fridge, shake them again in an hour or so they are best if left over night.

I goofed once and forgot to steam the carrots and didn't relize it until I had everything put together {senior moment I guess} so I nuked them for a few minutes and all was ok but I would suggest following the recipe.

sounds delicious! (with O modification...cider vinegar)
(I don't see oil in the recipe, but it would be good...tho it could be good without too)

Thank you for sharing your recipe, Rodney.  This is a good way to use up alot of carrots on hand.

However, isn't red wine vinegar an avoid?  I think it's classified in the same category as 'other' vinegars.

I duno about the vinegar that's kind of why I posted this?
would rice vinegar be OK?
maybe I should back off on drinking my hot water cider vinegar and honey drink until I find out for sure.

Perhaps fresh lemon juice, lime juice, frozen apple juice concentrate, grapefruit juice, tamari, mirin (unrated), white miso (very mild compared to the darker varieties) would work; or a combination of these.

I guess I was {AM} in denial about the vinegars.  
What would you suggest for a subtitle for vinegar? use the same measurements called for- just use one you mentioned?
Guess I will just have to experiment and since I need to make some soon well see how it works.

Ok I think I got it white wine will be ok won't it or half wine and half lemon juice.

Raisins, currants or sultanas are a really good flavour match for carrots, especially when they soak up the dressing.
Honey stir fry carrots are good too, if you don't have sugar/candida issues. Just slice carrots in thin diagonals, quickly stirfry in a tiny amount of oil (olive or sesame - both good)in really hot wok or frypan. Just before cooked, add honey (and tamari if desired) & stir around but don't burn. Really quick side veg. Cold leftovers can go in your next green salad.

The carrot salad that I make sometimes has carrots, sultanas (raisins) or currants, pineapple juice r agave nectar, and compliant mayo.

I would still use the 2 tbsp. of liquid as called for in the red wine vinegar.  This way, you will not change the integrity of the original recipe too much in terms of having it too 'liquidy' or too 'dry'.  Perhaps mix a little lemon juice (for the 'tang') and two or more of the aforementioned suggestions.

I like the suggestions of adding the dried fruits...it gives it a sweet touch and creates texture in the mouth.

Currants are very much like raisins, but smaller I think and much sweeter. I did a little check in the TB4 and currants have Protein (1.568 grams per 1 cup ), while raisins have
Protein (5.5935 grams per 1 cup ).   Quite a bit of difference if you have sugar issues.

I much prefer currants over raisins, although I do love sultanas, which are golden raisins but with more of a honey taste (mainly found in Europe).

Has anyone ever tried the Flame Raisins at WF?  Uhhhhhhhhh, they are SO good, but must leave them for now.

Raisins are too sweet for me to eat right now...  

The candida inflammation really blooms...  The most sweet food I can eat now is sweet potatoes, which I eat boiled with ghee and plain yogurt.  Really yummy!

When I eat really sugary fruit, my ears bother me, partly itchy and hard to describe the rest, sorry. I just realize it's from fruit and I think it's the candida issue - but because of the adrenal issue, fruit is not my best friend either and I really miss it.    Won't be forever tho  
P.S. Same thing happens to me if I have even a drink or 2 of soda.    Yes, I know.  
Also makes my throat sore.

Interesting about the ear thing. I've not been able to pinpoint why my ears start to itch, but I'm pretty sure it's not from fruit. It's something to keep an eye on, though.

My ears have been itching quite a bit, along with pain and itching from the top of my head to the tips of my toes...  Since I have had candida for years, I have developed the ability to ignore most of the discomfort.  It is definitely better if I stay away from sweet fruits and grains.  I have benefits from lime juice in water and fresh grapefruit.  I can also eat Ezekial bread for my tuna sandwiches for lunch at work...

Hopefully, I'm getting better!

hmmmm...the itchy ear thing.... mine is getting bad...it gets bad in winter....I have started putting grapeseed oil in them with Qtips, seems to help a bit.
