I have long wanted to try baking using pumpkin powder/flour as one of the ingredients in addition to sweet potato flour, so I was excited to see that Barry Farm Foods has this product. I ordered 4 packets. When the shipment arrived I was dismayed to discover that in addition to pumpkin, they've added these ingredients: corn starch, corn flour, and maltodextrin - yuk! These ingredients are not listed on the package shown on their web site. I'm trying to see if I can get my money back on this purchase.

If anyone has a source for ordering pumpkin powder/flour, I'd be grateful to know about it. Yes, I know you can make your own as it's basically dehydrated pumpkin ground in a food processor, but this is somewhat time consuming, not to mention the lack of available fresh pumpkins year 'round.

I am thinking about trying 1 cup of cooked or canned pumpkin to substitute for pumpkin powder/flour in addition to the sweet potato flour in my baking. I'm open to ideas!

Small amounts go a long way with pumpkin flour.  It has a long list of possible health benefits.  I made my own from fresh pumpkin last year.  I think of it as a seasonal item.  I kept mine in a glass jar in the freezer.

use cooked pumpkin in the recipe, only add less water to the mix.....

I decided to go with raw pumpkin, so I cut it in slices and placed it in the dehydrator until dry.  Then I pulverized it in the blender.
