Brig had posted re: using a salt brine (I think) to tenderize meat prior to cooking. I have searched all the ways I know and come up w/ nothing.
If anyone knows where that post is or what she posted, I'd sure appreciate the info or post info.
In searching the CR4YT book for this info, I also just read that for fish or meat, you should remove all skin and fat. Boil water in a pot large enough to cover the meat, turn off heat and let meat soak in water 3-5 min. It won't alter texture or flavor but will remove any chemicals that have resulted from the oxidation of the meat's surface. Rock on!!!   The things ya learn!!

or marinating with pineapple and lemon juice will also help.

papaya seeds are well known tenderizers.

I was hoping to find something to make my beef really really tender. Spoiled to aged meat.        Just can't afford it all the time. But once you eat THAT, nothing tastes quite as good. Oh well, gotta do what ya gotta do.
