Just before going grain free (we'll see how long it lasts) I made a wonderful cake with spelt flour and fresh baked pumpkin:
1 1/2 c. fresh baked pumpkin (I baked mine 2hr. at 325 then scooped out the seeds and scooped the flesh out of the shell....was done the day before so it was chilled when I used it) 1 3/4 c. sugar 3 Tbs dark molasses 1 c. oil (canola) 1 1/2 TBs. baking pwd 1 tsp baking soda...I almost forgot spices...Tbs cinnamin, T. allspice, tsp cardam0n 2 1/2 c. spelt flr. Oh, yeah, and a pinch of salt 4 eggs mix wet ingr. for a few min. in one bowl, dry in another, fold together, bake at 375 for 50-60 min....I used a bundt pan.

Last year, Starbucks had a wonderful pumpkin type upside down cake shaped like a muffin and glazed with............better not tell. Anyway, I got addicted to this dessert and would go every other day to buy one. Not too good for BTD or my waistline. But it was so------o delicious. These pumpkin cakes were only on sale for about 2 months. I was hoping they would be offered this year again. No luck! But good for my body. Now, armed with your recipe Jayney, I will make something healthy and at the same time satisfy my craving for Pumpkin cake.
