I just made some homemade flax crackers for the first time and they taste kind of fishy.  I'm wondering if my flax meal is still good?.  I also made some flax foccacia bread and i didn't notice the fishy taste.  I'm thinking the reason the flax crackers taste fishy and the bread doesn't is because the flax is more concentrated in the flax cracker recipe.

Does anyone know how to tell if flax meal is bad?.

I would say it is rancid
- I never buy flax meal  but grind it fresh for the same reason - it starts to get rancid extremely fast ( hrs)
watch your oven temperature as well- flax does not do well with high temperatures
- so I tend to dry/ bake at low heat when it is crackers.

Flax ideally should be ground fresh each time or at the very least kept frozen if they've been ground
and need to be stored.  Freshly ground flax meal tastes nutty, not fishy....so I'm thinking your flax
has likely gone rancid..or else it's another ingredient that went into the crackers.

How old were your ground seeds?  Where had they been stored? What were the other ingredients
in those crackers?

Honestly, when in doubt, don't eat anything that doesn't smell or taste right to you.

I agree with Chloe.  Flax is very quick to go rancid.  Grind seeds fresh before using (a simple electric coffee or seed grinder - usually $25 or so).  Keep Flax oil in the freezer and remove 10 minutes before using.

I coated the pan with olive oil.  I smelled it and it doesn't smell fishy, i've never smelled it before so i have nothing to compare to.

I used to buy the whole flaxseeds, but i found a big bag of flaxmeal at Costco that is much more cost efficient.  I think in the future i will freeze it until i need to use it.  I baked them at 400 degrees, i bake my flax bread at 350 degrees.  I guess next time i could try a lower temperature and bake longer?.

I've had the flaxmeal in the refrigerator ever since i opened the bag and i think i've had the bag for about 4 months.  I put sea salt, garlic powder, basil and onion powder in them.  The onion powder i've had a while.

No i didn't use any lemon juice.

Next time i buy the flaxmeal i'm going to freeze it until the time i need it.

I believe it was when i bought it.  I always check the expiration dates on packages and try to get the lastest expiration date.  It's Bob Mill's brand, which i think is a pretty reputable brand.  I'm planning on buying another bag, when i do i'll compare the smell and taste to the old bag i have.
