For all those who make water kefir.....

I've only been making it for about two weeks...my grains are growing beautifully and so I know I'm making it correctly.  But I find it still fairly sweet...even after fermenting for several days???  Isn't all the sugar suppose to be gone?  I'm just curious what others' experiences are because I am so prone to candida and don't want to inadvertently start feeding any yeast.  All the other fermented drinks I've tasted are not this sweet.

So, if you make it...what is your recipe????????  I've been doing 6 cups water, 1/2 cup organic sugar/sucanat combo, lemon, dried apricots and the grains....

I ve done all kinds of yogurt, like soy and other grain or nut milks.....
all turn into yogurt adding the kefir.....experiment away, like with using polyflora.....that makes yogurt as well

Hi LovetoRead!  I make both water and milk kefir.

Congratulations on getting your water kefir grains to grow!  I had to research and experiment a lot to get my water kefir grains to grow, but they have always made great tasting non-sweet kefir water.

I keep two jars for growing water kefir grains and two jars for brewing kefir water for drinking.

My growing kefir recipe is 3 tablespoons water kefir grains, 4 cups water, 1 cup organic evaporated cane sugar crystals, and a slice of ginger.  I change the water after 24 hours and it still tastes sweet.  If I use less sugar, it gets a sharp taste.

My drinking kefir recipe is 3 tablespoons water kefir grains, 4 cups water, 1/3 cup table sugar, and a slice of ginger.  After 24 hours, it tastes great, and not sweet!  I have a diabetic friend who is hooked on my water kefir and she says it does not affect her sugar levels at all.

Just keep experimenting and you will get some yummy kefir water too!  I hope this helps!

Thanks!  For the kefir growing recipe, how often do you change out the water?  

Also, for both recipes, do you put a tight lid on them?  I've read the kefir water is suppose to be fizzy, like soda, but mine really isn't. I've just been putting a towel over the top with an elastic to secure it (as my directions state). It's mostly flat, not fizzy.  I'm just trying to figure out if it is fermenting correctly.  I've read that if it isn't, then mold can grow...ewwwww.  

Also, have you ever noticed stringy things in the water that kind of float around?

I change out the water on all my jars every 24 hours.  I sometimes get strings, scum, and dark bubbles, too.  Rinsing the grains really well and washing the jar helps to get rid of it.  You may need to rinse the grains following several batches to get rid of the invader.  I find the water is still drinkable, however.  I have never had a problem with mold... ewwwww is right!

Personally, I do not care about the fizzy factor.  I use coffee filters and elastic bands.

Thanks Kathy!!  I ended up putting my grains in water plus 1 cup of organic Sucanat......I think they tripled in size...HOLY COW!!!!!!!!!!!!  Anyone need any grains??????????????

EXCELLENT!    I am thrilled to hear your grains are growing so well!  I hope the water tastes great too!

Since starting the SWAMI way of life, I have learned about all kinds of new foods.  Kefir milk is a beneficial food for me.  And I just love the kefir water.

And now that my grains have taken off, the kefir no longer tastes sweet and it is more bubbly.....so I think my grains just needed to "wake up" little.  Thanks again!  Unfotunately milk kefir is an avoid for me....too bad, because it is so yummy!
