Ive been wanting to try some Artichoke Pasta but what I have found locally has wheat flower added in.
Have any "O's" out there found this without wheat?

A word of caution.......try to get a small amount first......there are those that say it's not so good. I know it's all a matter of personal taste, but would hate to see you spend too much on it if you didn't like it. |

Another word of caution: there is no such thing as pure artichoke pasta! If you question enough you find that they all contain wheat flour. (Rossi, etc.) anyone who has found different please let me know!!!! |

I found some Yam noodles at an asian market, I've yet to try them. That's all I've found in the gatherer noodle department, and the only true yam anything I've found. |

Rossi is the only one that is from regular green artichokes.
I'd call Rossi and double check that. When I talked to them back in January of this year (2008 ) the person I spoke with said that it was made with Jerusalem artichokes. |

Rossi does not make one without wheat....beware. They say artichoke pasta but they don't say that there is also wheat in it. I had to give away 10 lbs of it...learned the hard way. |

I've enjoyed eating the jerusalem artichokes as a potato substitute, but no luck finding a noodle made from them. All the j.artichoke flour I've found so far is very expensive, as in $30 for 12 ounces. After finding yam noodles, I'm not willing to spend that much. (Look for bags of shirataki noodles in asian markets' refrigerator section, http://www.miraclenoodle.com/ is a very enthusiastic website about them, but a good place to see what they are like) |
