Since cranberries are a Diamond food, I'm looking for easy ways to use it.

I came across this sugar free dried cranberry recipe and I'm sure you could use it for blueberries as well!  I'm stoked!  Now I can munch on these diamonds every day!

Also if you clink on the link from this page to the trail mix... it looks like a great snack and you just have to pick your compliant ingredients to add.

If anyone knows a cranberry muffin recipe that I can substitute rice flour in that would be great as well.

Sure thing!  Does it need to be gluten-free or can it have spelt, eggs and what-not?

mix a bag of cranberries with 1 cup freshly squeezed orange juice (now that im a nomad i use pineapple juice) bring to a boil covered and let simmer for a while until it reaches a thick consistency. use it as cranberry sauce, plain, in yogurt or oatmeal

I can have eggs, etc., but no spelt.  Only rice flour.  I can have baking soda, baking powder...

Similar to mine - But I also throw in some pinches of Clove, Nutmeg, etc.

Its also good in homemade fruit wine or in Home-Brewed Stout.  

I've also been curious in trying it in homemade Pemmican someday...

ouuu Schluggell!  that sounds fantastic.  But I don't think I can have nutmeg anymore.  but cinammon...

My favorite way to use cranberries is to cut up a butternut squash into chunks (does not have to be peeled) and place in a casserole dish. Add whole cranberries, apple chunks and raisins and mix altogether. Make a sauce of 2-3 Tablespoons melted butter or ghee,  1 Tablespoon of honey or agave, and fresh squeezed lemon juice and zest.... or just skip this step altogether. Pour over all, cover and bake until squash is tender.

So wonderful... and my favorite dish to make during the holidays!

What I do is take any dried fruit and mix it with unsweetened cranberries so I won't have to
add any sweetener....and then I simmer all in water until the dried fruit has softened.  If I
puree the entire thing, I can use it in baking instead of honey, sugar or a lot of sweeteners... or
this allows me to use half as much sweetener as a recipe calls for....

I can spread the puree on muffins, toast, or crackers.

I can mix it with nut butter for a snack...I can stuff it in apples and bake them...

In my case as a Warrior, I use dried apricots and peaches and add cranberries.  Often I use the
dried unsweetened cranberries which I always keep around as a staple.

Dried cranberries added to muffins.

Cranberry relish made from fresh or frozen cranberries, red wine - I like a zinfandel (when you can have black dots items), spices (like cinnamon & cloves), a bit of citrus peel, and agave syrup or veg. gly.

Also you can make a cranberry relish that is easy and simple with one bag of cranberries, one cup of water, 1/2 cup of agave. Boil until berry splits and begans to thicken and then cool and add one can of drained crushed pineapple and stir. Put in bowl and refrigerate and serve as a side dish with meat or as a snack. This is one of the recipes I will be posting soon. You could also add some walnuts to add a little crunch.

I have only ever found frozen cranbrries, but I do love the tart little berries in a watermelon and lime breakfast slushie-  blend watermelon chunks wth frozen cranberries and lime juce; very good if you like things a little sour or tart- but in a good way  

Thanks for that link to drying your own cranbrries too- I wonder if frozen would turn out ok

I add dried ctranberries to my hot cereals in the AM and at Thanksgiving we make a relish with a bag of cranberries, blanched almonds, OJ or other citrus and cut up orange peels. Mom adds sugar, but I bet it can be made w/ somthing else like stevia.
