If this article doesn't motivate one to eliminate wheat products from their diet then I don't know what will. And a great explanation of spelt. I have recently found some products at my local organic store that contain ancient 'einkhorn' wheat. Like spelt it also appears to be high in protein. I notice DrD that there is no mention of this in the food lists.  Do you have any input on einkhorn?

I have know for such a long time that there were serious problems with our wheat. I look back to ailments I had as a child and they all had to be from the wheat we ate... my Italian family loves their pastas and breads. I had seizures, obesity and hormone issues. Are the Ezekiel sprouted products ok? I know they are organic, but was just curious to know. Sometimes you wonder if these organic producers have to buy things like wheat outside of our country because ours is not fit to eat any longer.

I feel really sorry for children growing up eating only Monsanto foods... How many epigenetic switches were turned on that have already wrecked the health of this and all future generations!

I have eaten it in cookies, pasta, and bread that I made from einkorn flour.
The products tasted great.
I didn't feel so great.  

Note to self: Reality check, you are an O nonnie. Skip the einkorn!

But I hope it works for others.
