So I have a random can of almond paste. Don't know why, but I have it. What can I do with it? Any ideas?

What are the ingredients? Just almond paste or is there added sugar?

If it has avoids in it, I'd donate the sealed can to a food bank. Otherwise I'd probably use it in cookies where I'd be adding a sweetener anyway. Add some eggs, then  shape into whatever shape you want and bake.

If I had almond paste, I wold not bake with it. Instead I would make marzipan by combining it with egg whites and whatever sweetener I was permitted.

I've baked cookies with almond meal or almond butter, sugar, and eggs; so I see no reason why I couldn't make cookies from a "almond butter and sugar" mixture plus eggs. I've never actually tried this, though.

Almond paste is different from almond butter.

You can make cookies with either.

Here is a recipe for making cookies with eggs and almond paste:
http://lemonsandanchovies.com/2013/11/ricciarelli-almond-paste-cookies/

Almond paste is difficult to find where I am at, particularly if One wants it free of corn and sugar.  When I do find almond paste it is two to three times as expensive as almond butter.

I have never but it because of the price and ingredient issues.

I like marzipan a lot and you cannot make it with almond butter.  So if I were to get almond paste that is how it would get used.

C-sharp- we Danes eat an awful lot of marzipan   but I have never seen it with egg whites
Ours contain 66- 75 % almonds and the rest is sugar
I have made it myself with almonds and honey very tasty.

I remember the first time I tasted a truly beautiful piece of marzipan candy.  I absolutely hated it!  That was when I was a young girl.  I think I was expecting something like a coconut flavor and was a bit in shock.  I wonder what my reaction would be now?

Very likely it has been full of  apricot seeds as well = very bitter almond flavour or artificial almond flavour.
Cheep marzipan is sadly filled with that- but real marzipan is JUST almond paste and sugar.

I can see where that would make a huge difference!  Considering that our family had very little money (just post depression times) when I was young, I assume that the "marzipan" I tasted was the cheap kind.

You can blend with water for a sweet almond milk but make sure to drink it with a couple of deflect. A lot of brands have some nasty ingredients.

The one and only can I have does have artificial flavorings. Other than that it's just almonds and sugar.  I like C"s recipe, would have to make my own powdered sugar as all here would have cornstarch added. It looks really good! So when I make it all do all even the paste from scratch.

I think I'll just see if I can make some simple coco balls out of it.

Back in the day, I must have eaten a ton of croissants filled with almond paste, with a side of a double tall latte!

Well, those days are just part of my memory bank now.

Normal day, let me be aware of the treasure you are.
Let me not pass you by in quest
of some rare and perfect tomorrow.
