Hello, does anyone know if the oxalic acid in amaranth is reduced if one sprouts amaranth first before eating? How long does it take to sprout adzuki beans? would it be about 3 days or so?

Also remember that, with any sprouting or fermenting project, air temperature makes a different. Things will sprout faster in a warm summer kitchen than in a cooler winter kitchen- even the location within the kitchen (closer to the oven? In a cooler corner?) can impact timing as well. In some homes, with summer air conditioning and winter heating, there's little difference in indoor air temperature with the change of seasons. In other homes, this difference can be quite dramatic.

thankyou Lola and ruthiegirl for your answers/comments; the adzuki beans started to sprout and will be ready tomorrow - I just eat a small amount as in general, legumes are a bit too drying for my system and I need to retain my water and fat content in body or I become too thin and feel worse too (so seeds/nuts are more for me). Mung beans sprout quickly and fenugreek seeds take about two days. Green lentils did not sprout well, and I don't feel they are for me - just my intuition and the smell put me off too. Yes, you are right, will take longer in cooler weather/environment. It's good to experiment or I would never know about this type of food.
