I used to regularly make pizza dough with just rice flour (plus water, salt yeast, oil, and a small amount of sugar to feed the yeast. Now I make it with spelt flour, since the kids like the texture better and I shouldn't have the pizza toppings anyway. |

This looks so good! Has there ever been any food that compared to a good pizza? In spite of the horrible avoids for me in regular pizza, when I ate it long before BTD I would feel wonderful and have a huge amount of energy. I can certainly see why pizza is the go to food for students putting in long nights studying, lawyers up all night working on cases, and any number of other stressful situations! How I felt so good after eating all that tomato, cheese, beef and other abominations is beyond me. Our children and their families would think I had turned into an angel if I could master the art of making compliant pizzas! |

I'm making pizza for dinner tonight. Spelt flour dough, homemade tomato sauce (from tomato paste) for the girls and a sauce-less pizza for my type B son, and mozzarella cheese. I'll also have some veggies available for toppings: red bell pepper, onion, and mushrooms. Or maybe just the pepper, depending on how much energy I have when it's time to make dinner. |

Too bad I don't get cauliflower, this looks good. Reminds me of - zucchini crusted pizza that a friend used to make. Hmmmm....giving me ideas. Thanks Chloe!  |

Only the mozzarella cheese would work for me, and that only now and then, and the onion. So my pizza would come up way short, I'm afraid! |

Yeah, I can't have the spelt, mozzarella, or tomato either. I had lentil-quinoa soup and fried eggs for dinner. I also ended up making spinach eggs (onions, spinach, feta, eggs) for Hannah because she didn't want to fill up on pizza- though she did eat a small portion after she finished her eggs. There's a ton of pizza left over, which I'll probably freeze for Leah's school lunches. |

I even saw a recipe on a low-carb diet site to make a chicken crust for pizza- using ground chicken in place of flour for the crust. I'm sure turkey would work equally well for those who can't have chicken. I never personally tried that because I don't mix dairy with meat or poultry.
I've also made a "pizza quiche" (also from the low-carb forum.) It's mixing together eggs, mozzarella cheese, tomato sauce, and whatever "pizza toppings" you like and pouring into a greased pie plate and baking. Before finding BTD, I used to make myself a pizza quiche while the kids had pizza. |
