The milk solids and whey liquid are cooked out, leaving pure butterfat. It is the butterfat that contains the butyric acid which is so beneficial for the digestive system... |

Just made a new batch yesterday! Added 1 TPS to my green tea before it even solidified.  |
| My SWAMI diet is a blend of BTD and GTD Explorer, but I'm not totally compliant. Also I try to choose foods that have a Low Glycemic index. DW and DD are A+, probably also Explorer. |
