Can someone tell me why exactely eating bread for Os is so bad? Is it because it creates more acid? or...?
In addition have any Os that have been doing this seen any increase in blood cholesterol levels? Mine has been pretty stable around 160-180 for many years. That was eating breads, veggies, spagetti, and not all that much meat.
In addition is pasta ok? I am not sure if it is buck wheat or not. Hard to tell and most restaurants don't know...

Nearly all bread is made with wheat or has added wheat gluten, which are bad for O's because of a known lectin that agglutinates blood.
The same is true for pasta, but you can choose rice noodles to get around that. Most restaurants should know if their noodles are rice noodles. Soba is usually buckwheat, but I don't know if it also has regular wheat.
My total cholesterol has always been so high that I don't bother to track it anymore.
My SWAMI diet is a blend of BTD and GTD Explorer, but I'm not totally compliant. Also I try to choose foods that have a Low Glycemic index. DW and DD are A+, probably also Explorer.
these white products also feed a message to the brain which says, the body need more glucose and then when the glucose isn't use, it is added to the stomach area in the hard to remove fat.
Have you tried spaghetti squash, I did recently and it is good. and almost the same as a angel hair spaghetti.
I really like soba noodles, but they nearly all seem to have wheat in addition to buckwheat. I recently discovered black bean noodles. Delicious! Not gummy. And gluten free.

To get a known acceptable bread, you'll probably have to make it. There is a focaccia style bread in the recipe center that several O's really like made with whatever seeds / grains that are beneficial or neutral for them.

I buy brown rice pasta in Trader Joe's, and I sometimes buy a loaf of spelt bread there as well. I don't buy the bread often because spelt flour is cheaper, but the purchased loaf is better for packing sandwiches, which DD1 likes to have as an option for the school year.
I don't buy pasta in restaurants. I've never in my life heard of a restaurant offering anything other than regular semolina pasta. Semolina is a variety of wheat that's often used in Italian cooking, such as pasta, some Italian breads, etc. It's just as harmful for O's as "regular" wheat.
If I eat in a restaurant (which has been about twice in the past 3 years) I'll get foods naturally wheat free, such as a bunless burger with salad, un-breaded meats with rice, roasted veggies, or sushi (skipping the soy sauce because that's often fermented with wheat or processed with corn ingredients.)
My cholesterol levels have remained normal as I've eaten lots of meat and veggies and very few grains. I have a type O friend who had high cholesterol for most of her childhood; drinking skim milk and avoiding high fat and high cholesterol foods. Her cholesterol normalized once her mom put her on a low-GI diet, switched her to full-fat milk and cut back on sugars and starchy foods. She's now a very healthy teenager, and her cholesterol has stayed in the normal range as long as she keeps the sugars/high GI foods to an absolute minimum.
I see that you're living in Asia, and I have no idea what kinds of ingredients they use in restaurants there. Rice noodles may be easier to come by over there than they are here. Buckwheat (aka soba) is sometimes made from 100% pure buckwheat, and sometimes from a mixture of buckwheat and wheat. Rice is probably a safer choice than noodles if the chef can't verify the ingredients of the noodles. It should be easy enough to find veggie-based meals with some meat in them (if the food actually available in Asia is anything like the Asian restaurants found in the States, at least.)

Not actually bread, but some wonderful sesame/almond flour crackers by Elana Amsterdam. She has a gluten free site and some cookbooks with recipes based on almond flour. Everyone who has tried the crackers loves them.
But I miss wheat bread, too. And to think that I used to add semolina to my pizza dough in order to have additional gluten. I will eventually try heirloom variety flours for baking bread.
Have you tried Udi's or Rudi's? I prefer Rudi's multgrain.

Rice and noodles are very common in Asia. And unforutnately the noodles are also loaded with MSG. I try to stay away from them as much as possible. I have no idea if western pasta also has this problem or not.. Soy and soy bean products are also very common.
I stay away from white rice as much as possible. It will turn to pure sugar in the body when digested and has been suspected to be causing a lot of diabetes issues in Asia now and most certinaly in other parts of the world. Potatos are bad for Os and well do the same thing as rice, they turn to sugar. So if one wanted to be on a low GI diet thy should be staying away from white rice. Thus, I also stay away from rice noodles and frankly I don't really like them anyway, gooy sticky mess if you ask me...
I love Italian food, pizza and pasta, it would be very difficult to give these up, but at the least I can certainly avoid eating them too often. I guess I will have to abstain from these foods much longer now. Eventually I might have to eliminate them entirely.
Soba noodles are a type of noodle from Japan, I rarely see that here though.
Well at the end of this year I will probably get a blood test and I will see the effects of eating more red meats on my cholestrol. I am hoping that it either reduces it or maintains a similar finding.
