That's a good idea for oats.  I just cook them low and slow for a loooooooooong time and they seem to digest well.  I mean I'll leave them on a low heat for a couple of hours. Stirring occaisionally. Sometimes longer.  But yeah, the longer the better.  I'll have to try the slow cooker like that.  I have yet to do it.

It's really easy to use the slow cooker. There's something so nice about having hot oatmeal ready and waiting for you when you wake up, too. I've even used cooled leftovers in homemade bread and muffins, so waste not, want not

I hear you.  But I don't eat grains for breakfast.  It doesn't do me well.  I eat them for lunch, snack and dinner.  I do better on either vegetable soup, or fruit and dairy for the morning.  It's just my body.  Now for my kids, I'm sure it would be a good thing!!!!  My wife doesn't like oatmeal that much.
