I read in my Aging and Cancer books from Dr. D that green beans were super beneficial.  Who would have thought that a boring green bean would be beneficial.  I love them.  Just finished some for supper that were cooked in the new plastic steaming bag.  Sure was an easy way to cook, but somehow it sounds like the worst of several worlds..... microwave and plastic.  

At any rate.... A green bean salad is a wonderful idea.  Or maybe I could even take them frozen and cook some in the bag in the microwave, if I am ever in the office!!!  A lot of my work is out and about in the community.

I would cook them on the stove and take them to work......then just slightly warm them up in the micro if need be!
