I've noticed that some of the meats for Type B are not usually found in the regular grocery store such as goat, venison, mutton, and rabbit.  I was wondering where I would be able to find some of these.

Have you asked your meat manager about rabbit? I know at least one local standard grocery store I shop at has some in the frozen meat section and I know I have seen it in other stores before.

For venison try to find someone that hunts and have them hunt a deer for you. I am making arrangements to do that this year.

A goat farmer sells frozen goat meat at our local farmers market and I have found frozen rabbit at the grocery store. Sam's sells New Zealand lamb as do 2 of our grocery stores. If you can get to a Whole Foods they have a wide variety of lamb, buffalo, and turkey but they are a little pricey. Venison is pretty much a hunt it yourself matter. Sometimes ethnic grocers carry some of the harder to find items.

We can buy pretty good nz venison in the shops now....
I┤m starting to experiement with it - a bit pricy but the taste is a bit milder than the stuff my granddad brought home.
The cuts are easier as well, small medalions, filets and some pretty good stir fry meat.
I get lamb from a farmer - sometimes I have seen goat but that has been unusual so I survive on 75 % neutral meat
( beef, veal and turkey)

I get some neutral young grass fed beef as well- I share 1/2 an animal with my mums place( all o┤s) and I love the varity of meat I get- not to mention brilliant bones for stuck
- the meat ( liver etc) that I don┤t care for Sienna gets
The only problem is
1) you have to know how to cut up an animal
2) have a large freezer.

If you have a butcher nearby, you can ask them about specialty meats. Often they know where to find the more 'unusual' meats. They can also get things like beef heart and other organ meats.

My mother used to buy beef hearts really, really cheap from a local butcher. They were absolutely delicious baked.

When I was a kid we used to get this really tender meat that was cut in stripes in a reach cream gravy... it was beef hearts....

is there any special trick to baking beef hearts?
would you marinate them first before baking?
