I tried the pumpkin seeds from the grocery and they made me all itchy in my mouth.  Thinking maybe I'd do better with those of a better quality? (Or maybe it's just a matter of re-storing good adrenal function...or maybe it's the pesticides on the seeds...?)

leave them all night, then air dry them, even toast them with a bit of ghee and spices.
or just raw, but dry.

I picked some up at Trader Joes yesterday.  Since they were raw, I soaked them in salt water for a few hours, spred them out on a baking sheet and added a few more spices, and put them in a 300 degree oven for about an hour.  Just before I took them out, I added some ghee for flavor, and the are GOOD!!

I soak 'em overnight in salted water (approx. 1/2T to 2 cups seeds) and then drain & dry them in the warming drawer in my gas oven for a day.  Sometimes I'll then toss them with some tamari (wheat-free!) and re-dry for my type A husband.  He loves them that way.

Favor organic, raw pumpkin seeds.

Preferably, if they are sold in the bulk refrigerated section, this would be great.  

The co-op I frequent sels them in the bulk refrigerated section.  Other co-ops and hfs's I have shoped at sell them unrefrigerated, as well.  I believe the refrigeration keeps the delicate oils in the seeds fresh--especially if there is not a high turnover in the store.
