I am in the market for new cookware and this weekend I found the Emeril cookware on sale. It was 18/10 stainless steel but on the bottom was alumium and copper. Would you think with the alumium & copper on the outside of the pots it would be okay. THe interior was the ss. IT was a great price 199.00 w/$30 coupon. Today is the last day of the sale. They also throw in a cast iron griddle.
Apologies for not seeing your question until the sale had passed. I hope you got it anyway and kept your receipt in case you needed to return it. The aluminum & copper used to enhance conductivity is fine imo. NONE of that will be on contact with your food. I have a super Cuisinart stock pot with the same kind of sandwiched super-conductivity bottom while the food surface is stainless steel. It is a wonderfully-functional piece.

Last night my son made Bison Chuck Roast in the big one. He put a little beef broth in the bottom, then added parsnips, onions, chives & tarragon. After he took it out of the oven, it was so tender and very tasty. Good “B” meal.
