Adding lecithin would be fine. One can add lecithin to any food, albeit it's usually not added to hot foods.
Fresh, dried, or poached fruit is always a nice dessert option. Since you can have dairy, perhaps homemade yogurt, ice cream, or sorbet sweetened with fruit juice with seasonal cubed fruit, topped with a few nuts/seeds or raw carob/cocoa powder.
Fresh vegetable crudites/sticks are always a great snack item for myself. You can add a compliant dip/nut butter to your vegetables if you want something to accompany them.
Seaweed is a savory and somewhat salty snack idea.
