Long-Awaited Salmon Recipe

Hey y’all…here’s the not-forgotten salmon recipe from a hundred thousand years ago. The only catch to this one is that unless your sweetie eats it too…you’ll knock out your date with garlic breath!!

Finely mince 6-8 fresh garlic cloves. Pour right onto the cutting board a bit of olive oil (1tsp or so) and some salt (1 tsp or so) and mash well with the side of your big gnarly knife. Add a bit of freshly shaved lemon rind (1-2tsp) and mix in with a few freshly squeezed drops of lemon juice. Mix all of this and rub into your nice fresh slab of salmon flesh. Squeeze out the rest of the lemon onto the fish and broil until meat is flaky. The garlic browns up and the edges get all crispy…it’s quite yummy!!

I’m not a huge fan of salmon, but I know that it’s good for me…so this is how I prefer to choke it down. Tee hee…I’m sure the garlicky mixture will taste quite yummy with just about any heavier fish.

I’m going to be out of it still for the next week or so with many holiday travels ahead. I will, however, have my computer with me…so there may be blogs in the near future. I’ve got a few notes to return to…so I haven’t forgotten you if you’ve written…stay tuned! I’ll get your info for you!!

Omigosh!

I think that I may have just made the yummiest new thing that’s been new to me in a long while! Okay, here’s the story…it was totally by accident, and completely one of those create-what-you-will-with-what-you’ve-got-in-the-fridge masterpieces. First, I steamed a head of cauliflower for about 5 and a half minutes and then mashed it up into a million tiny bits. Whilst waiting for the steaming and cooling, I sautéed garlic, mushrooms, onions, and leftover turkey meat chopped into bitsy pieces in olive oil and a little PAM. I added Herbamare, parsley, garlic powder and some tomato paste. After mixing and adding a bit of water for liquid, inspiration struck. I tossed the last of my low-fat ricotta cheese (about ¼ of the container) into the pan and let me tell you…it got so pretty!! Enter aforementioned mashing…I did add a pat of whatever butter-stuff spread that I have (Healthy Choice or Heart Smart somethingorother). I mixed both concoctions together and I have to tell you that it reminds me a little bit of stroganoff (though I haven’t had beef stroganoff in over a decade), and regardless is so yummy!! I am so excited for lunch tomorrow!!

Go ahead and try it…or just rummage around in your fridge and see what you can create! Hope that this finds you warm and dry…be well…

Rawr

Hey all…I’m still here and kicking around…and loving my space!! The lovely scent of pine is now infusing the interior of my domicile as I purchased a bitty Charlie Brown tree this weekend. It may be the most adorable thing I’ve ever seen (about three feet tall and only five bucks!). Too much fun…

Okay, on the BTD front:

I have gotten the most lovely communications within the past week or so and all I can say is THANK YOU for your ever-kind words. Feedback is touching and sometimes desperately needed to rejuvenate lagging compliance, or just cold-weather doldrums. Keep up your journey Sally and all of us…we deserve to live better, eat better and FEEL better!!

With the change in weather, I’ve been crazy over soup making. I have forgotten how much the body wants to hunker down and CHOW once the temperatures begin to drop…I’ve been an eating machine! I’ve also been craving heavier and sweeter items…so this week I’m loaded with parsley soup and plenty of steamed veggies so that if I can’t control the urge...to...feed (insert booming announcer voice here), at least I’m not baking a quarter batch of cookies or something! I know I’ve promised it before…and I’ll promise it again…that long-delayed salmon recipe is on its way, as well as a delicious turkey soup, and maybe a few other odds and ends.

Sorry I took such a long hiatus…I do hope that this finds you all compliant, safe, sane and smiling. Be well…

Dumb and Drooling

Oh, the pleasures of having one’s own space are immeasurable. My refrigerator and cabinets are stocked with compliant foods, my plants are green and happy, and my music generates an energy that fills this space with lightness, contentment and peace. My being seeps into every corner and leaves behind a lingering hint of scent that reminds one of lavender, castile soap and pure love. I am at once fully at peace and utterly content. I am a queen, a king, a princess and a snake. There is no end to my creativity, passion, or hunger for all that Life can teach me.

As you can tell, I am in a very good place right now. I’ve been highly compliant in my eating, back in the pool and finally taking time for me. I feel more “me” than I have in some time and it feels fantastic. The care and feeding of my soul has been constant, nurturing and kind. It is so wonderful to feel so good, no matter what daily events may dish out. I am remembering how to move in my skin, lean into the wind and smile with abandon.

To revisit an old topic: Living a highly beneficial life takes any relationship with the BTD to the next level...I believe that it’s not enough to just EAT right, one has to remember to LIVE right too. It has been nearly one entire year of focused living by BTD principles and I have found myself into a pretty easy routine with healthy eating (as long as I make time to purchase/prepare food in advance). The recent challenge has been taking the time to care for my self…but I think that I may have passed that summit in my journey ever upward. I revel in the success of being treated well and cared for. I give my eternal thanks to the winds that brought me to this new lifestyle because it has given me back the freedom to be completely me.

Tossed in the Drink

Or…I’m back in the pool-finally!! Ahhhh….I cannot describe how wonderful it feels to be swimming again. My skin rejoiced to feel the water streaming across it while my muscles bunched and pulled and remembered how to slice through the liquid. It can be so hard to set work-outs as a priority in the day…but it is oh-so-worth it in the end. The levels of emotional ecstasy and physical satiation are just as powerful as eating right. With the diminished light of winter making everyone tired and feeling drug-out, being in the pool (or whatever your pleasure may be) is nearly as good as a strong dose of sunshine (which is getting weaker and weaker by the day, so sad!! I think that I’ll start researching light boxes here very soon).

Well all…I hope that this finds you well, happy and compliant! More to come with a yummy, yummy (EASY) salmon recipe soon…take care…
