I'm not much of a recipe person. We mixed together softened goat cheese (chevre) with agave and eggs, then baked. I honestly can't remember the proportions, what the oven was set to, or how long it was baked for or whether or not we used any vanilla. It probably was made slightly differently each time we made another batch.

I'll try to measure what I throw together when I make the cheesecake later this week, and then add the recipe to the recipe base.

We adapted a recipe we found online that called for whipping the egg whites separately and then gently folding in the egg yolk/cheese mixture. We found that we didn't like that "light and fluffy" texture so much, and we preferred the denser texture of the "lazy" recipe.

For the "traditional unhealthy" cheesecake, we used the recipe on the box of cream cheese. It called for white sugar,eggs, cream cheese, sour cream, and vanilla. My 17 year old made it with spelt flour, although she could have used rice flour. She quadrupled the recipe and made it into 4 small pans: one plain, one chocolate chip cookie dough, one chocolate, and one raspberry. The cookie dough was homemade with spelt flour, brown sugar, butter, eggs, vanilla, and chocolate chips. Only a small portion was used in the cheesecake and the rest was baked into cookies. She didn't use any kind of crust.

I ended up not measuring or keeping track of the ingredients in the goat cheesecake, since I made it during the holiday itself. I ran out of time and energy before the holiday started.
