February Findings
Well, well, I simply can't believe it's already almost over. Airbrakes is done with & my LIRR ticket class starts today. In a month & a half, I'll be on the trains & getting paid......FINALLY!!! All this work & no pay makes our finances.....pretty tight.
Despite that, we're fortunate enough to not have to give up the staples of our diet, like organic deli turkey, organic deli roast beef (for the O) organic soy milk, fresh celery, carrots & lettuce & frozen broccoli & spinach. I find the broccoli always goes bad when I buy it fresh & spinach is too much of a hassel to cook by hand. The organic eggs we had to give up but I'm only eating the egg whites so it's not so bad, I think.
Valentine's Day was very special. I don't usually get excited over meals. I mean food is here to fuel ourselves really & hopefully taste good in the process. I like jewelry & such as a preferred gift.....I mean, who doesn't? But the way to my man's heart is definately through his stomach. So since it's tight this year, he made me a romantic dinner. Very sweet. It ended up being the most DELICIOUS dinner I've ever had & now I can safely say, that if he made this again, I'd be terribly excited.
Pine-nut encrusted rack of lamb w/ olive oil & garlic cauliflower & mashed potatoes w/ gravy. SOOOOOO GOOD!!!! The only avoid he used was half a beef bullion cube. We have veggie broth so if there's a next time, I'll just ask him to use that. I swear, the cut of meat really does make a difference. I'd post the recipe right now but he combined 2 recipes from on line to make it. Hopefully in the future.......
Dance Dance Revolution - on another forum I often visit, a fellow poster was mentioning how DDR is now starting to be implemented in some schools for gym. WHAT A GREAT IDEA!!! WHERE WAS THIS WHEN I WAS IN GYM???? I sure would have exercised more with that.
For those of you starting DDR, don't give up. It's a little frusterating at first but after 3 days, you'll start to get the hang of it & not feel like a complete fool. Wear very light clothes, like shorts & a tank as after 15-20 minutes, I'm always sweating like a pig. Be sure to go to "options" in the main menu. Had this for a year and a half & just clicked on it last week. You can change the graphics of the arrows, the flashing background (if you are prone to siezures, always good to turn that off) or get rid of the little guy that dances with you. But I like them, doesn't make me feel so dumb dancing by myself....:-)
