I tried fennel tonight
This has been another unusual week weather-wise. We are now above freezing and earlier it was rainy. The highway between here and Anchorage and Seward was closed yesterday and didn’t reopen until 3:15 this afternoon. There was an avalanche blocking the road near Seward, but the primary reason for the closure was the icy condition which caused many accidents. We also had very high winds with one gust registering 96 mph which really wrecked havoc with driving as the snow and rain made it nearly impossible to see. That was a major facet with all the accidents. With rain on the ice it’s like driving on a wet skating rink. They were thinking of closing the road again, but I don’t know what they decided. There is just one road, a regular two lane highway with occasional passing areas, which goes into Anchorage. Sure makes life interesting while driving around. I did stay home today as I didn’t have any reason to be out and about.
I tried an interesting recipe tonight using Fennel. The fennel was sliced, boiled, drained and then coated with flour, egg, and parmesan cheese before deep frying. It did have a nice flavor, but I’m not sure it was worth the work. Once in a while I enjoy trying unusual recipes.
Did I tell you about my roast beef sandwich at my favorite restaurant? It is now being made with romaine lettuce replacing the bread. I must admit that I sure like it better, too. My husband was aghast when he first saw me pick it up to eat. I now longer feel guilty when I order a sandwich. I really hate throwing food away and it bothered me to discard most of the bread. Now, I don’t have to do that anymore.
