Long-Awaited Salmon Recipe
December 23rd, 2004 , by adminHey y’all…here’s the not-forgotten salmon recipe from a hundred thousand years ago. The only catch to this one is that unless your sweetie eats it too…you’ll knock out your date with garlic breath!!
Finely mince 6-8 fresh garlic cloves. Pour right onto the cutting board a bit of olive oil (1tsp or so) and some salt (1 tsp or so) and mash well with the side of your big gnarly knife. Add a bit of freshly shaved lemon rind (1-2tsp) and mix in with a few freshly squeezed drops of lemon juice. Mix all of this and rub into your nice fresh slab of salmon flesh. Squeeze out the rest of the lemon onto the fish and broil until meat is flaky. The garlic browns up and the edges get all crispy…it’s quite yummy!!
I’m not a huge fan of salmon, but I know that it’s good for me…so this is how I prefer to choke it down. Tee hee…I’m sure the garlicky mixture will taste quite yummy with just about any heavier fish.

December 7th, 2004 , by adminI think that I may have just made the yummiest new thing that’s been new to me in a long while! Okay, here’s the story…it was totally by accident, and completely one of those create-what-you-will-with-what-you’ve-got-in-the-fridge masterpieces. First, I steamed a head of cauliflower for about 5 and a half minutes and then mashed it up into a million tiny bits. Whilst waiting for the steaming and cooling, I sautéed garlic, mushrooms, onions, and leftover turkey meat chopped into bitsy pieces in olive oil and a little PAM. I added Herbamare, parsley, garlic powder and some tomato paste. After mixing and adding a bit of water for liquid, inspiration struck. I tossed the last of my low-fat ricotta cheese (about ¼ of the container) into the pan and let me tell you…it got so pretty!! Enter aforementioned mashing…I did add a pat of whatever butter-stuff spread that I have (Healthy Choice or Heart Smart somethingorother). I mixed both concoctions together and I have to tell you that it reminds me a little bit of stroganoff (though I haven’t had beef stroganoff in over a decade), and regardless is so yummy!! I am so excited for lunch tomorrow!!
Go ahead and try it…or just rummage around in your fridge and see what you can create! Hope that this finds you warm and dry…be well…

The lovely scent of pine is now infusing the interior of my domicile as I purchased a bitty Charlie Brown tree this weekend. It may be the most adorable thing I’ve ever seen (about three feet tall and only five bucks!). Too much fun…
Okay, on the BTD front:
I have gotten the most lovely communications within the past week or so and all I can say is THANK YOU for your ever-kind words. Feedback is touching and sometimes desperately needed to rejuvenate lagging compliance, or just cold-weather doldrums. Keep up your journey Sally and all of us…we deserve to live better, eat better and FEEL better!!
With the change in weather, I’ve been crazy over soup making. I have forgotten how much the body wants to hunker down and CHOW once the temperatures begin to drop…I’ve been an eating machine! I’ve also been craving heavier and sweeter items…so this week I’m loaded with parsley soup and plenty of steamed veggies so that if I can’t control the urge...to...feed (insert booming announcer voice here), at least I’m not baking a quarter batch of cookies or something! I know I’ve promised it before…and I’ll promise it again…that long-delayed salmon recipe is on its way, as well as a delicious turkey soup, and maybe a few other odds and ends.
