Omigosh!
I think that I may have just made the yummiest new thing that’s been new to me in a long while! Okay, here’s the story…it was totally by accident, and completely one of those create-what-you-will-with-what-you’ve-got-in-the-fridge masterpieces. First, I steamed a head of cauliflower for about 5 and a half minutes and then mashed it up into a million tiny bits. Whilst waiting for the steaming and cooling, I sautéed garlic, mushrooms, onions, and leftover turkey meat chopped into bitsy pieces in olive oil and a little PAM. I added Herbamare, parsley, garlic powder and some tomato paste. After mixing and adding a bit of water for liquid, inspiration struck. I tossed the last of my low-fat ricotta cheese (about ¼ of the container) into the pan and let me tell you…it got so pretty!! Enter aforementioned mashing…I did add a pat of whatever butter-stuff spread that I have (Healthy Choice or Heart Smart somethingorother). I mixed both concoctions together and I have to tell you that it reminds me a little bit of stroganoff (though I haven’t had beef stroganoff in over a decade), and regardless is so yummy!! I am so excited for lunch tomorrow!!
