That frittata recipe sounds delicious! I'll have to try that sometime soon!

I found it strange to have Earth Day fall in the middle of Passover. Normally I'm very eco-conscious, but this one week a year I use a lot of disposables- making a kosher Passover kitchen is a lot of hard work. So I bake in foil pans, use paper plates and paper napkins, when the rest of the year I'm using cloth napkins, real dishes and pans, etc.

And Earth Day often falls during this time! Why can't Earth Day be in May?
