My mother used to make the best beets ever. She diluted a little cornstarch in water, then added fresh lemon juice. When the sliced beets were cooked, she added the cornstarch and lemon juice and cooked it a few minutes until the sauce was clear. The lemony sauce clung to the beet. I imagine arrowroot might work just as well.
