Roast Beef
September 30th, 2004 , by adminI cooked a roast today. I chose an eye-of-round for two reasons: first because it is very lean, second because it is fairly small, and I am the only O in the house right now.
I cooked it my mother's favorite way. I put it in an open pan in the oven and turned the heat up to 450° F. After 20 minutes I covered the pan with foil and turned the heat down to 250° F. The roast weighed 2.5 pounds, and I set the oven timer to go off after 3 hours. When I got home from school it was still warm, and so tender that in nearly fell apart when I cut it.
I usually try to eat beef at lunch and have food at night that both Os and As can eat. But tonight I made an exception. I fixed tilapia for the As. We shared vegetables: butternut squash, broccoli, and fava beans.
